``GRAY CUPS COFFEE STAND'', which has been loved as a place to expand your view of coffee and enjoy coffee together, reopened as ``COFFEE LAB GRAY'' on January 2024, 1.
Kofu City Iseno"NAVYespresso"It is open on Sundays and Mondays, which are closed.
We will further strengthen the concept of "A new experience with specialty coffee" and invite you to a world of coffee full of surprises and excitement.
This is different from "NAV Yespresso", where you order after taking your seat. There are special seats with different tastes, such as counter seats, single seats, and double seats.
``At a coffee stand, there are many take-out customers, so I wanted to create a place where people could listen to people's impressions of the coffee and casually discuss their views on coffee. In terms of surprises and new experiences, I prefer unique beans rather than standard ones. The shop owner, Yuri Sawaya, talks about her thoughts on the recent reopening: ``It's big, and the price goes up accordingly. That's why I think it would be better to understand its rarity and taste better...'', says the owner, Yuri Sawaya, about her thoughts on the recent reopening.
I see! I also like coffee, but I tend to order the same thing all the time and don't try much. Even if you are concerned about the country of origin of the beans, you may not have paid close attention to the differences in roasting and extraction methods.
So today, let's have a coffee-only course consisting of 4 extraction methods, which is completely reservation-only, and have a coffee experience that changes depending on the extraction method!
Today's coffee is Geisha washed coffee grown at Las Marias Farm in Colombia. She sits at the counter and enjoys the conversation while admiring Yuri's masterful hand movements.
First, enjoy the aroma of freshly ground beans. It's not a fruity scent typical of Geisha, but rather a spicy scent like Japanese pepper, which surprised me.
Start with hand drip.
Enjoy a variety of herb-like flavors in a wine glass. Take a sip while enjoying the high-quality aroma. The powerful sourness that smoothly passes through your throat and gives you a sense of depth and bitterness will completely change your previous image of Geisha...!
However, the aftertaste is refreshing, and you can feel the aroma coming through your nose and the long aftertaste of coffee. It's interesting how the flavor gradually develops as the temperature changes.
Next is cold brew.
``It's easy to smell, so please use a whiskey glass,'' says Yuri. The pairing was with dried peach and mango fruits.
Even though it's the same bean, the taste can change so much! Yes, where does that strong sourness go? The bitterness has been removed and you can feel the solid sweetness of candy.
The pairing with dried fruit is also great, and it feels like they complement each other and make a statement.
Next time, I will enjoy the milk brew with the same dried fruit pairing.
Oooooooooo!!!! This is completely different! Everything is covered in milk, making it feel like the highest quality royal milk tea.
The dried fruits like peach and mango also became less assertive in a good way, and on the contrary, the sense of unity with the milk-brewed coffee became stronger. At the end, there's a light fruity scent, and you'll feel as refreshed as after drinking fruit tea.
Lastly, my favorite latte ♡
...But that's it. Geisha's personality is quite weak. "Hmm, it's delicious, but if you're going to go to the trouble of drinking geisha, maybe it's better not to have a latte." Yuri laughs at my impression.
I'm always a latte fan, so I was surprised to hear such an impression. It wouldn't be possible for me to be the usual me.
Ah, this is a new coffee experience!
Yuri-san, coffee is amazing!!
