The Japanese eel called the Japonica variety is used at Unagi River in Shimokurihara, Yamanashi City.Farmed in the clean water of Yamanashi, it is characterized by a higher amount of oil and softer meat than regular eels.
If you take a bite, you will be fascinated by the balance between the crispy fragrant skin and the thick and plump meat.
The sauce, which is indispensable for eel, is an original eel river made by a long-established eel sauce shop that has been in business since the Meiji era.
