Sawadaya's "Lemon Tama" has become a symbol of summer in Kofu. The long-awaited summer at Sawadaya will finally open its doors on June 2024, 6. Packed with the deliciousness of lemon, it will start off much more powerful than last year!

In pursuit of a more refreshing lemon flavor, the company has stopped using Meyer lemons, which had been used in its yokan until last year, and in 2024 will focus exclusively on Setouchi lemons from Hiroshima.
"Yokan is the first impression that the tongue feels, so we wanted the customer to feel the lemon itself, rather than just a hint of orange or honey," said public relations officer Reina Kurosawa.

The Setouchi lemons, preserved in honey with the skin on, are carefully de-seeded by hand, and then blended on a coarse grinder, with plenty of the skin, pulp and juice added to the bean paste and yokan. A refined sourness and a hint of bitterness... this balance is the most important key, and it is here that the salt koji in the Gomi soy sauce plays a key role. The saltiness of the salt koji added to the bean paste brings out the mellow sweetness of the white bean paste, adding richness and depth.

The exquisite triangle of sweetness, sourness, and bitterness is what makes this Lemon Ball so special. The taste of the lemon peel and flesh stands out clearly, and you can feel the arrival of summer.

Lemons preserved in syrup with the skin on, a sauce made from crushed whole lemons, and pure lemon juice. The taste of lemons + Shio-Koji... a refreshing sourness, bitterness, and subtle sweetness enveloped in a gentle richness.

Every year, Sawadaya's seasonal sweets make me feel like "This is even tastier than last year!!" I no longer have to worry about how hot summer is and how cold winter is, and now I can look forward to the changing seasons with their seasonal sweets.
