~ The original landscape of the soul reflected by Tali

"This is the road I came down before, oh, yes..."
Kitahara Hakushu's lyrics will warm your heart and make you feel nostalgic.
Perhaps it is because my emotions are stirred by childhood memories and the vague images of childhood that remain in the depths of my heart.
Even though I'm not from Yamanashi, there is a place that reminds me of these lyrics.
"Uguisu Baked Goods and Indian Curry" is quietly located along the Daibosatsu Line in Shiozawa.
When I entered the store, the atmosphere, which resembled my grandmother's house in Nerima Ward, calmed my soul.
The atmosphere here is the same as it was back when I was a child.
Time passes at the same speed now as it did back then, but back then the wind blew gently, the birds chirping, and even the ticking of the clock felt slower.
The interior of the store, which was renovated from an old Japanese house, is filled with a warm and cozy atmosphere that makes use of natural materials.
The reason for choosing this location for the cafe was that it resembled the scenery of Rishikesh in northern India, where the owner used to live.
In the silence surrounded by deep greenery, the strength and energy of the earth overflows. I take my seat, thinking of the faraway land of Rishikesh.
What we have here is the Indian version of a set meal called "thali."
Thali, which means "plate" in Hindi, comes with three types of curry, two to three side dishes, achar, chapati, and a mix of five-minute polished Japanese rice and basmati rice.
Today we have three choices: classic chickpea curry, boiled egg curry, and cabbage curry.
The side dishes include potato sabji, beetroot poriyal, bitter melon sabji, and eggplant, radish and carrot achar, all of which are beautifully coloured and have a wide variety of spiciness, sourness and textures.
With just one bite, you can't help but feel the complex combination of flavors and the profound food culture of India, a country with a population of 14 billion.
Thali, which packs every delicious taste into one dish, reflects the original landscape of India, where diverse ethnic groups and cultures, as well as differences in religion such as Hinduism, Islam, and Buddhism, are intricately intertwined.
After your meal, enjoy some baked goods that are 100% plant-based and made without butter or eggs.
There are also pound cakes and lemon cakes made with rice flour and chickpea flour.
Since I'm okay with wheat flour, I ordered plain scones and organic coffee made from Indian beans.
These rustic and simple scones have a wonderful fluffy and crispy texture and are truly worthy of praise!
Enjoy a cup of high-quality specialty coffee delivered from a farm in India and roasted in Japan.
Delicious baked goods and Indian curry will fill your soul and bring to mind nostalgic memories from deep within your heart.
The happiness of sharing a meal with loved ones in nature is surely the same in India and Japan.
