IshihamaJapanese food/Skewered food[Marunouchi, Kofu City]
This Japanese food and skewered restaurant is located on the second floor of Koshu Yumekoji, just outside the north exit of Kofu Station. It has two counter seats and a table seat that can be enjoyed as a semi-private room, so you can relax and enjoy your drinks and food. All of the dishes prepared by the chef, who is a former kaiseki chef, are exquisite.
They have a selection of over 100 sakes, with a focus on dry and refreshing flavors. As their concept is "find your favorite sake," you can compare over 15 types of sake, including rare sakes, for just 1 yen per glass, which is amazing. They offer a la carte dishes, but the course menu is highly recommended. Their menu changes depending on the season and what's available at the time, such as a three-kind appetizer platter or the dish of the day, but their dishes, such as the quintessence of Japanese cuisine, simmered eggplant, seasonal corn with white sesame sauce, and roasted aitchbone beef cooked at low temperature until it melts in your mouth, are all carefully handcrafted to create delicate flavors.
If you come here, you must try the skewers grilled over binchotan charcoal! The high heat and direct flame make them plump and juicy, brimming with flavor. Freshness is key to the liver of the Shingen chicken, which has a tender texture and shows off the skill of the griller. Nakamura Farm's original local chicken, Kaiji Shamo, has a moist texture and a delicate flavor that is almost sweet. The skewers are beautifully cut to an even thickness, which not only looks good, but also cooks them evenly, making them evenly delicious! It's also a luxury to choose a sake for each skewer and find a pairing that brings out the best in each one.
