After training in buckwheat noodles at a long-established store in Shinjuku, make a U-turn.
Together with my parents, I opened a soba shop in a large old folk house.
The 200-year-old Shoya was renovated into a store. It was a vacant house for about 20 years, but I asked Mr. Ishikawa, a palace carpenter of the master building, to complete the complete restoration except for the roof by the conventional construction method over about a year.

The store is lined with paintings and antiques collected by the husband's father for about 40 years. The soba inoguchi used in the store is one of the collections.
The warm and nostalgic atmosphere is very comfortable as if you came back to your parents' house.

Mr. Tetsuya Kaneko, the owner who grinds soba with a stone mill.
Not only making soba, but also woodworking and dyeing are outstanding artistic senses.
His work is also the sculptures that support the wax-dyed curtains and the sticks that are covered with curtains.
To decorate the "carp" over the "come" so that many customers will visit.

Buckwheat ground from buckwheat flour with a stone mill is a gem that you can feel the chewy texture even with thin noodles.
Cooking is done in the kitchen, which is a renovated storehouse in the annex.
We are particular about what we cultivated on our own farm, and the dishes that do not use any additives are popular because you can enjoy the goodness of the ingredients.
Kaiseki course 3,500 yen for lunch and 4,000 yen for night. (Please book the course by the morning of the previous day)

Castella / coffee set
We are proud of our castella made from silkie eggs that we keep outside.
Castella made from home-grown flour and homemade honey is simply delicious, as you can feel that it doesn't contain any extras.Enjoy coffee with a moist texture.

Rolling out ...

Soup roll egg
The soup-rolled egg made from silkie eggs is also a popular menu item.750 yen per person.
It contains plenty of slightly sweet soup stock and has a fluffy and gentle taste.
I'm glad that you can enjoy the precious silkie eggs to your heart's content. (The photo is for two people)

And many more

After the interview

There are many antiques in the store, so it's fun to look at them one by one.
There are friendly goats and silkie chickens outside, so you can spend a relaxing time.
I want to enjoy soba slowly around the hearth.
