Observation/Stardust Restaurant Gaia Appetizer 1

Shinji Kanda, who is in charge of Gaia's cuisine, is a skilled chef with approximately 35 years of experience in French cuisine, having trained at a Michelin-starred restaurant in France and then working at a famous restaurant in Tokyo. We create Yamanashi's food culture by sublimating rich local ingredients into one-of-a-kind course meals using the chef's techniques and unique sensibilities. Because it's a casual prix fixe set course, the hors d'oeuvre has a lot of volume and can be arranged in a variety of ways.

Almost all of today's six types of hors d'oeuvres use local ingredients. Local strawberries and prosciutto, Shingen chicken galantine, Togen pork pate, and Togen pork rillettes on a baguette. Gougères, which are made by mixing cheese with choux pastry and baking them, have chopped raisins from the prefecture inside, giving them a gorgeous aroma and a light aftertaste, perfect for pairing with wine.

The fruit salad is loaded with seasonal fruits, and the French dressing is just a side dish. Taking advantage of the natural sweetness and freshness of each fruit, you can enjoy the juicy sourness, sweetness, and bitterness as a dressing.

Observation/Stardust Restaurant Gaia's main dish 1

One of the best parts of this prix fixe set course is that you can choose from four main dishes. The meat dishes include grilled Shingen chicken, grilled Togen pork, lean steak from Mt. The fish dishes change from time to time, but today's dish is pan-fried red sea bream. The skin is grilled to a crispy texture, the flesh is soft and fluffy, and the homemade basil sauce and brightly colored vegetables add color.

It's hard to rate it as good or bad, but what's worth mentioning is the lean steak from the whole body of Mt. Fuji beef that's delicious! The firm lean meat is extremely soft and sweet, and it attracts foodies from all over the country. The mellow flavor nurtured by the nature of Yamanashi is mellowly wrapped in a special Japanese-style soy sauce-based sauce with hidden fruits such as apples and bananas.

If you'd like to pair it with a new type of ``Bijou Noir'' called a black gem. It has a blueberry-like aroma and firm tannins, which are sure to bring out the natural flavor and sweetness of the meat.

Observation/Stardust Restaurant Gaia's Dessert

The course concludes with today's dessert, "Mille-feuille with plenty of strawberries," created by our pastry chef. The crispy pie crust is topped with plenty of custard cream to gently shift your taste buds from salty to sweet. The sourness and sweetness of the strawberries are well balanced, and the excitement is felt in every corner.
