Galette & Whiskey ROND, a rare shop where you can enjoy the marriage of galettes and whiskey, will open in Kiyosato on December 2024, 12! It is located in an easy-to-find location next to Koshu Houtou Kosaku along the Kiyosato Line.

The interior of the restaurant, designed by Watanabe, who is also a spatial designer, is bathed in brilliant light during the day and features a striking vivid green color that evokes the image of a highland, but at night the moody lighting transforms the space into a calm bar space with deep tones.

Galettes, a local dish from the Brittany region of France, are typically paired with cider, a sparkling apple drink, by locals, so the idea occurred to us that they might also go well with whiskey, and so we opened a galette and whiskey shop.
A wide variety of whiskeys, which are a little out of reach, will be on display so that customers can pick them up just by looking at the cover. There will also be six types of Belgian non-alcoholic craft beer!

The signature galette is a recipe that recreates the flavor that Chef Honda of Blanc Yatsugatake, a renowned Yatsugatake restaurant for French cuisine, had while training in France, so expectations are already at their highest.
The galettes are made from 100% pesticide-free stone-ground buckwheat flour, and they offer a variety of desserts as well as meals, which is a paradise for a galette lover like me!

Let's start with the classic complete. The crispy and fragrant dough is full of flavor! Baking it like this must require a skilled technique, on par with making soba noodles.
And the complete set here is something else! Yes, the secret is in the eggs, which are as shiny as "hateful orange". They are eggs from "Koshu Jidori" chickens, which are raised free-range and on plant-based feed for nearly three times as long as commercially available chickens. The rich, full-bodied, mellow flavor will envelop your tongue.

There is also a galette that uses this chicken called "Sautéed Koshu Chicken and Mushrooms," but today I chose the healthier salad galette.
A simple dressing of lemon, salt, and olive oil brings out the flavor of the Yatsugatake spring water trout. The soft, moist texture and fine, melt-in-your-mouth meat... the delicate flavor stimulates the senses.

For the final course, try the seasonal strawberry galette♪...is that too much?! No, no, this is easy to eat with the light and refreshing yogurt cream. It's gluten-free, and the appeal of galettes is that they are "delicious, fun, and beautiful," so all right!
