A new French restaurant has opened on the west side of Kofu Nishi High School! Chercheur, which opened on December 2024, 12, is not a formal French restaurant, but rather serves Western-style cuisine using French techniques.
From mid-January 2025, the restaurant will be open from lunch through to dinner, which is rare for French cuisine, and will focus on single dishes rather than course meals.

From the opening date of December 12th to the 25st, the restaurant started off by offering only dinner courses by reservation. So, this time we tried the "Omakase Course of the Day." It was a luxurious selection that included an amuse bouche, three hors d'oeuvres, a fish dish, a meat dish, bread, two desserts, and an after-meal drink.
First, let's start with Chef Yoshihiro Muramatsu's specialty, which highlights the umami and sweetness of carrots. A smooth carrot mousse that brings out the sweetness is accompanied by a flavorful consommé jelly, and the salty taste of prosciutto adds an accent.

The appetizer features a wonderful marriage of citrus-based sauce and shrimp, and is enhanced with couscous. Garlic and anchovies decorate the oysters and chicken, and the cauliflower is enjoyed in two flavors, roasted and soupy. After the three sensual appetizers, we continue with red sea bream with crispy skin and plump inside.

The flow of the course is also important. The story unfolds like listening to a sonata, and it's enchanting. The main meat is Fujizakura pork, aged for five days at 1℃! The superb taste, which combines a moist texture and tenderness, is served with the excellent Périgueux sauce.

The first dessert is apple compote and jelly with ginger granita to reset your mouth. To finish, enjoy the harmony of hot and cold with coffee-flavored ice cream and fondant au chocolat.
