The neo-izakaya "Shin Hajimemashite" in Showa-cho has opened a ramen shop that is only open during the day from Tuesday to Friday! It's called "Menya Men Susurimashita". If the shop curtain is up, it means they're open!

The lively interior is illuminated with lanterns and Showa-era neon signs, and in addition to counter seats, you can also sip your ramen at leisure on the sofas at the tables.

There are three types of ramen you can get here: the signature Tori Paitan Shoyu Ramen, Tori Paitan Shio Ramen, and Nostalgic Shoyu Ramen. Today is my first visit, so I went for the safe Tori Paitan Shoyu Ramen.

Chicken soup made by simmering chicken bones and momiji (chicken feet) for two days is rich in momiji and collagen, making it a great soup for women. It brings out the umami of chicken and the aroma and sweetness of soy sauce to the fullest. It has a rich umami flavor and is smooth and mellow.

The noodles are medium-thin noodles from "Menya Teigaku" in Kyoto, which is used by many restaurants with long lines, and the spring onions topping is Kujo spring onion, which links with the noodles and Kyoto. The crisp, white noodles are slightly firm, which I really like.

And the meat is especially delicious! The pork shoulder is simmered for a long time until it becomes incredibly tender. It's so delicious you'll want more.

I also like that it comes with a seasoned egg as standard. The yolk is soft and runny, and the half-cooked egg is perfectly soft. The egg is lightly seasoned so that the soup doesn't become too sweet.

"Menya Men Susurimashite" is a ramen shop that the owner of an izakaya restaurant has always wanted to open, and is open only during the day when he has free time, with a lot of fun and heart. Next time I visit, I'll be slurping down the refreshing chicken white soup salt ramen.
