"Kai Tonkotsu" is made with the ingredients of Kai and shellfish stock, so you can enjoy the rich flavor of shellfish stock x pork bone soup. Choose your menu from the ticket machine as soon as you enter. The "Kai Tonkotsu Ramen" is the base, and the black one is spicy with chili oil and the red one is spicy with half-cooked kimchi, so I chose the "black" this time.
Inside the store, there are only seven counter seats with slightly high chairs, and towels and chopsticks are provided. The water is self-serve, but I was a little surprised that the glass was so big (lol).

You can choose the noodles from balikata, kata, normal, or soft, and the flavor from strong, normal, or light. Since it was my first time, I chose medium firmness and flavor for the noodles, and had the choice of having the chashu either rare or grilled, and since I'm a fan of richness, I opted for grilled.
The umami of shellfish such as scallops, clams, and clams is combined perfectly with the mellow, rich pork bones to create a cloudy, thick soup that is rich yet surprisingly easy to eat. The flavor of the shellfish fills your mouth, and the deep, aromatic mead oil whets your appetite.
Inside the exquisite soup, which has a creamy texture and richness, yet a refreshing aftertaste, the white ultra-thin straight ramen noodles stand out with beautiful shapes. It is crisp and goes well with the soup, giving it a certain elegance.

The contents seem to change depending on the season, but today's dish includes maitake mushrooms, bamboo shoots, fried tofu, and finely chopped chashu pork.The simple and gentle seasoning brings out the texture and flavor of the bamboo shoots.
