The first dish was grilled halfbeak carpaccio with a surprise presentation. The cold-smoked halfbeaks that emerge from the pure white smoke are coated with nikiri soy sauce and then grilled, giving them a rich flavor along with the dried bonito flakes. The wasabi-like spiciness of nasturtiums grown without pesticides makes a nice accent.
The second dish is a chive made by a French-trained chef with a marriage of stewed beef and winterized sweet potatoes. The beef that has been stewed for over 2 hours and the smooth mashed potatoes that bring out the sweetness of the potatoes themselves create a perfect harmony.
